Too Much Food or Not Enough? A Week of Baking With Me!

I don’t believe this post needs any introduction as you’ve probably seen the header image and want to dive right in! I don’t blame you! Welcome to, ‘A Week of Baking with Me!’, where I share with you all of the glorious bakes and cakes that I have made recently! Healthy eating, who? I feel like I do need to put a little disclaimer in, that you probably won’t end up feeling too great if you decide to eat these all in one go. Well, you’ve been warned… Let’s go!

White Chocolate and Raspberry Cookies:

Arguably, the best duo to ever grace the cookie world – don’t come for me! Who can resist the sweet temptations of white chocolate with the tangy, sauciness of a raspberry or two? Not me! I found this recipe on the ever trusted ‘Jane’s Patisserie’ website and am SO HAPPY I did as it is simply glorious! I will definitely be making these again and before I bore you all senseless… I’ll let the food p*rn speak for itself!

Zizzi’s Garlic Bread with Mozzarella and Caramelized Onions:

I couldn’t believe my eyes when I stumbled across this little gem on Facebook. Lockdown has clearly got to us all if Zizzi’s are giving away their tried and tested recipes. Well, they gave part of it away… I began to feel like I was in a Great British Bake Off kitchen (without all the glamour and the TV people) as I tried to work out certain aspects of the recipe. Now, although I was very proud of myself for making this from scratch, yes I did make the dough too, I’m not too sure if I’ll be making it again. It’s a lovely dish, but I think Zizzi’s can take it from here!

Chocolate Cornflake Nests:

After all, no Easter weekend is complete without a chocolate cornflake nest or two! If you’re a shredded wheat or a rice crispy nest person, then I’m afraid I will approach with some caution. There is no contender for the top nest position in my eyes and my Aunt’s recipe is the only one we use! Who can resist some chocolate, crunchy goodness with a mini-egg or two on top? Not I!

We always double or triple the quantities so if you’re after a chocolate nest feast, be sure to do the same before trying this recipe!

To make nine nests you’ll need:
Sugar (50 grams), Butter (50 grams), Cocoa Powder (40 grams), Cornflakes (40 grams), Golden Syrup (2 tbsp)

Biscoff Cupcakes:

Now, if you’ve been a follower of this blog for some time now, you’ll know how much I rave about Biscoff. I can’t resist it and I had to make these Biscoff cupcakes for my family! Clearly I have the biggest sweet tooth of them all, as they found them a little too sweet for their liking… I’ll be disowning them shortly! 

I think they look absolutely delicious but I do think the Biscoff cake I made wins over the cupcakes.

  2. So many yummy recipes here – I’m actually drooling while reading this! I think the biscoff cupcakes are my fave though, might need to give those bad boys a try!
