Triple Chocolate Cookies – Tanya Burr Inspired

Yep, you guessed it! I’ve been baking again and it’s another chocolate treat! I know you’re probably thinking what on earth is she doing baking in this heat and to be honest I’m not quite sure how I survived.

These cookies are an all time favourite treat of my sister’s and as it was her 23rd birthday yesterday (and she’s coming to stay for the weekend) I HAD to bake them for her!

Now, this isn’t the first time I have made them and although the recipe isn’t my own (it’s the amazing Tanya Burr’s, linked here), they’re too good not to shout from the rooftops about so that’s what I’m doing!

In total I made 10 large cookies and 5 slightly smaller ones and what I love most about this recipe is the outside is nice and crispy but the inside is gooey with pools of melted chocolate. What’s not to love?

The recipe is extremely simple to use and you can ‘personalise’ it as such to make the cookies your own, personally I like to stick to the recipe as feel that they make the yummiest cookies. All you do is cream the butter/sugar together, add an egg (I’m sure you could make these with an egg substitute as well), add the dry ingredients, then the chocolate and BAKE!

Tanya’s recipe states a ‘large bar of chocolate’, I tend to go for 200g of both milk and white and only 100g of the dark (I find too much dark chocolate makes them too rich for my liking). Plus, I only break up the chocolate into the squares of the bar, not any smaller as that way you get big gooey bits of chocolate in the middle!

If you’re looking for an especially naughty treat I’d suggest heating the cookies up slightly and enjoying them with some ice cream! Delicious!
