The ‘Best’ Chocolate Brownies?

Now, I don’t know about any of you but I find brownies ‘extremely’ hard to make. Just as I think, ‘Wow, they actually look alright’, I take them out and the sinkage of all sinkages happens and they end up looking like I’ve sat on them by accident!

However, today I may have turned my brownie baking around with the batch I am about to rave ALL about. I hunted long and hard all over the internet and stumbled across a recipe claiming to be the ‘Best ever chocolate brownie recipe’.

That’s a big ol’ claim in brownie land!

But hey, I have Tuesday’s off university and a guest round for dinner this evening so I thought I would try it… (Yes, you can give me an award for best hostess!)

Now, I had seemingly forgotten how much hard work brownie making was. Chopping chocolate chunks, measure out what feels like a billion ingredients and whisking up eggs and sugar by hand. I have lost feeling in my arm and it’s currently just flopping around in my lap as I type this! The recipe says to melt 185g of dark chocolate but I didn’t see this and didn’t buy enough. Oops, so as a result I used 135g of dark and 50g of milk instead.

After fashioning a make shift divide down a tin way too big for the recipe, ‘doh’ silly me, I plopped the mix into the oven for 25 LOOOOONG minutes. (Hoping that Alexa wouldn’t curse me as I went old fashioned and used my phone for a timer!)

Don’t they look yummy?

I did as the recipe said and gave my brownies a wobble before taking them out of the oven. A small little sinkage did begin to appear but I managed to avoid a major disaster. I just popped them back in the oven for a little bit (don’t worry, I had turned it off).

After removing them from the oven ‘again’ I waited for them to cool for around 30 seconds. I then placed them on a cooling rack. Do people actually wait for the full cooling time? For the finishing touch I melted the remaining white chocolate to drizzle over the top. What a difference it made too!

I really do hope that one day someone will invent smelli-vision (for only the good smells) so you can smell these for yourself and yes, I did have a cheeky taste and they are YUMMY, especially when warm.

I can only hope now that everyone else who is going to eat them loves them too but even if they think they’re gross at least they look pretty? I’ll let you know if they make it to dinner time or if I end up eating them all… (Apologies in advance to my dinner guest if this is the case).

P.S: Apologies for the repetitive use of the word ‘sinkage’ but this is a common issue with all previous brownie baking of mine.

Not getting melted white chocolate on my duvet was a tricky task!

  1. They look like they were worth all the hard work 😊. Brownies isn’t something I make very often but this post is making me want to give them a go. Thanks for sharing

    1. I always used to steer WELL clear of brownies as they scare me, you could probably tell in the post but these turned out really well! My friend and flatmate loved them and I am taking some to uni tomorrow to sell in a bake sale. x

My biggest problem with brownies is that they always come out too flat and hard. I’d like to give this recipe a try, they look great. The white chocolate over the top was an excellent idea.

    1. I have had that problem for years, I’d put them in for the correct amount of time and they’d come out and sink immediately! I’d say definitely try these but I actually made a make shift divide in my tin as it was too big, so the tin was the size the recipe said. I feel like if I hadn’t done this then it could’ve all turned out very differently so stick to the tin size required! Thank you! x
